Top restaurant that keeps transforming is closing and changing again in Toronto

There’s one particular popular restaurant in Toronto that’s enjoyed a lot of success, and they just won’t stop transforming from one concept to another.

Pompette started out as a straight up French restaurant, earning praise for their elegant menu that leaned heavily on French traditions. Despite the acclaim they were getting for their French food, the restaurant quickly transformed into a new concept within just a few years of opening.

Pompette became Vinotecca Pompette, and the restaurant began incorporating Italian influences into their menu.

As Vinotecca Pompette, the restaurant has been serving dishes such as tuna crudo, hand-rolled filled pasta, whole Quebec duck breast, braised short rib, a gourmet burger, pavlova and panna cotta.

Now, Vinotecca Pompette is transforming yet again, and they’ve taken to social media to announce the next new chapter of their restaurant adventure.

Sharing plates, elevated snacks. A refined version of ‘hanging out with friends at home.’ Easy going, welcoming, spontaneous, quality drinks and food,” reads a post from Vinotecca Pompette on social media.

“Bar Allegro brings us back to our original 2020 idea: a bar focused on cocktails, wines, and snacks to share. Covid pushed us into a restaurant format. Now we return to what inspired us from the start.

Join us throughout December until January 4 and celebrate Vinoteca Pompette for one last month.

We look forward to welcoming you at Bar Allegro after a short renovation.”

The team behind Vinotecca Pompette is never short on ideas, as this venture isn’t even their only one in the neighbourhood. The same people that run the restaurant also operate a bakery and bar under the Pompette name not far away on the same street, both of which are just as popular and impressive as the restaurant itself.

Bar Allegro should be opening in the same space where Vinotecca Pompette now resides at 597 College St. in early 2026.
