Three Michelin-level chefs just came together to open a new restaurant in Toronto

Three incredible chefs have joined forces to create what is already one of the splashiest new restaurants in Toronto.

LSL stands for Leroy, Saito, Le Squer. Dider Leroy and Christian Le Squer are French, and Masaki Saito is Japanese, with all three boasting elite status in the culinary world. You probably recognize Masaki Saito from his nominal two-Michelin-star restaurant, Sushi Masaki Saito, the first and only restaurant with two Michelin stars in Canada. Leroy and Le Squer have also worked in Michelin star environments in Paris, and have been in the industry for decades.

The LSL website promises that at the restaurant you’ll find “a harmonious marriage of French tradition and Japanese knowledge and products.” It’s food that will be experienced by a precious few at a time, as LSL’s exquisite dining room has just nine seats. The crown jewel of the space is a 200-year-old Hinoki wood bar from a single Hinoki tree from Nara, Japan, from which a custom-built range is visible.

Here, you’ll find dishes that aren’t just elegant, they’re works of art. For example, their “signature Tomato creation” consists of just three perfectly presented ingredients that are meant to be eaten in two bites: handpicked seasonal Japanese tomatoes, medium fatty tuna and French caviar. There’s also the Steamed Barracuda Fish Cake made using fish paste, shallots, button mushrooms, cubed barracuda and parsley sifted through a chinois for a smooth texture. Another dish juxtaposes ice cream with lobster bisque, and a foie gras dish is inspired by the beauty of the beach.

LSL Restaurant is now open at 2066 Avenue Rd. in North York.
