The list was first put out starting in 2019, and this year over 850 steak restaurants were evaluated worldwide. Evaluators judge restaurants by intensive criteria: meat quality, selection of the meat (aging, origin, breeds), quantity of steak cuts offered, service quality and meat expertise, description of offered cuts, the wine list, user friendliness of reservation system and handling of reservations, online presence that meets the demands of an international clientele, and interior design.
