Restaurant that keeps transforming has reopened with newest concept in Toronto

A restaurant that has been defined by the way they keep changing has reopened with their hottest new concept yet, and food lovers in Toronto are going wild for it.

Bar Allegro has been through a lot of changes over the years, and now they’ve made their latest transformation. The restaurant started out as Pompette, serving up more strictly French fare with an emphasis on refined technique, stunning plating and traditional ingredients viewed in fresh new ways.

Not long after that restaurant had opened, just a few years later Pompette made a huge transformation and became Vintoecca Pompette, a concept that blended both French and Italian influences on the menu for the ultimate European food experience, right in the heart of Toronto.

“From Paris to Toronto,” reads a post about the owners and founders of Pompette on social media. “Jonathan, Maxime & Martine are trained in the great classics of French tradition and being rooted in Toronto is a beautiful opportunity to share their knowledge and passion.”

Now, they’ve embraced the spirit of change to undergo yet another metamorphosis, and have reopened the space where they’ve been hard at work for years as Bar Allegro.

“Space evolve,” reads a social media post about Bar Allegro from last month, saying they were building the bar and that it would be opening soon. “Stories continue.”

The newest iteration of the Pompette team’s restaurant concept is more based around aperitivo and cocktails, with a slimmed down vibe that’s a little more light and chill in terms of the fare on offer. Their website simply states they’re focusing on “modern aperitivo, elevated snacks” and “slow sips.”

The Pompette team has been hard at work since around 2019 when they first started they’re journey, and the restaurant isn’t the only thing they’ve been working on. They’ve built up their own mini empire in the Little Italy neighbourhood, starting with the restaurant and then branching out to open Bakery Pompette and Bar Pompette on the same street, both of which are just as impressive and delicious as Bar Allegro.

While Bar Allegro is around for now, this team has proven that they’re not content to settle and are constantly looking to expand their horizons. So if you’re looking to check out the spot, you might want to do so quickly before it possibly changes up again.

Bar Allegro is now open at the same address where Vinotecca Pompette had previously been operating, at 597 College St.
