Popular Japanese-style cafe in Toronto debuts spring-inspired items

A trendy Toronto cafe has made an entire menu celebrating spring.
NEO Coffee Bar, best known for its elevated takes on Japanese cafe culture, has launched several locations throughout the city over the last couple of years.
Dominating the market with its rotating seasonal menu and stellar bakery, NEO has just announced its Spring 2026 lineup.
Aiming to take classic coffee shop staples and redefine them with a refreshing twist, NEO has cooked up some light and flavourful treats that practically rival the sensations of a spring breeze.

“At NEO, we’re seeing guests look for comfort they recognize, but with something a little unexpected. This spring, we’re leaning into that idea – taking familiar flavours and elevating them with refined ingredients and seasonal brightness,” said NEO Marketing Consultant, Alan De Luna, in an official statement.
New menu items include a lemon drop cake, dressed with lemon curd, smooth cream cheese frosting and finished with fresh lemon gel, as well as a sea salt and ube latte, the latter of which is infused with sweet ube, giving it a lavender aroma.
“It’s taking something people already love – like a latte or slice of cake – and refining it with ingredients that feel seasonal, globally-inspired and thoughtfully layered. We want every item to feel both familiar and a little surprising,” adds De Luna.
NEO Coffee Bar’s new spring selections are available at all locations starting this week, until May 31.
